I'd like an ST370 or 390 with Mahogany neck. Anyone know of these?

Did you read these specs?
http://www.t3-kundenserver.de/htmlpages/redasys/_core/databases/t_meinl-uploads/ 1979_tomorrows_name_in_guitars.pdf

and
http://www.t3-kundenserver.de/htmlpages/redasys/_core/databases/t_meinl-uploads/ 1980_the_brass_beauties_poster.pdf

The body of the ST370RW is Rosewood and Maple on a basis of Ash.
It's neck is 3 ply maple.

and here we only see a description of the ST390, which seems to be of the same wood, but with different electronics.

No mahogany necks so far...

Nigel,
Take a good look at the headstock. That's a brown stained 3 ply maple neck. All mahogany bodies are an option. The ST50BS I bought has a mahogany body colour. But they also exist laminated with a maple center section and either mahogany or ash side sections. With or without walnut accent lamination.
I don't know what's the best option for your ears. I think it's the character of the V2 pickups that's hurting them.
The Epiphone Sheraton II has a laminated maple neck too and sounds pretty warm to me.
I think he same electronics will sound just as loud and shrill in an all mahogany guitar. Mahogany won't kill all your trebles. It's mainly an electromagnetic signal we're talking about, not an acoustic guitar. But there will be different weight and sustain.

Ginger are you talking about the ST50 having a maple/mahogany body?

It's not just the V2's. I have ANTIQUITIES in my ST-100, with 300K pots and those still hurt. Now realize, I have a Zinky amp, and it reveals ALL.
