Hi, I was wondering if I could take a lefty acoustic and re-string it as a righty, or will the angle of the saddle cause a problem??? Thank You

Callawag,

Pretty much all of the Ibanez acoustics that I've seen, back to the late '70s, have compensated saddles. So, yes, inverting the order of the strings would cause an intonation problem. Also, I think the nut (holds the strings in place just below the peghead) has grooves that are meant to match the size of strings running through them.

It really wouldn't hurt to try this callawag, but I'd have low expectations of the results.

A luthier could solve both of these problems for you (for a price).

Oh, and don't forget that the pickguard would be on the wrong side. That's purely a cosmetic / protection issue though.
